Apple cake

Here is the classic apple cake with its rich smell filling the whole house, great for breakfast or snack!

Ingredients
  

For the cake
  • 5/6 apples
  • a pinch of salt
  • 1 lemon
  • 1 teaspoon of cinnamon
  • 150 g sugar
  • 50 g cornstarch
  • 2 eggs
  • 1 teaspoon of baking powder
  • 80 ml milk
  • 220 g flour
  • 100 g butter
For the glaze
  • 50 g sugar
  • 125 g water
  • 8 g cornstarch

Instructions
 

  1. Peel 2 apples and cut them into cubes, sprinkle with cinnamon and the juice of half a lemon and put apart
  2. Cut the other 3/4 apples in slices and sprinkle them with the juice of the other half of lemon and put a part   This allows them not to oxidize and turn dark (they will be used for decoration).
  3. Beat the two eggs and the sugar with an electric mixer for a few minutes at medium speed
  4. Add the soft butter (not cold from fridge) (You should leave the butter for 15 min. outside the fridge or put it for a few seconds in the microwave)
  5. Continue beating 
  6. Add the grated lemon peel
  7. Add the milk
  8. Add the flour, cornstarch, a pinch of salt and cinnamon
  9. Finally, add 1 teaspoon of baking powder and the diced apples left aside at the beginning Mix everything with a wooden spoon to make it all homogeneous
  10. Pour it into a cake pan (24 cm) previously greased with butter and dusted with flour (in this way it won’t stick)
  11. Heat the oven on static mode at 180 °C  (356 °F)
  12. With the sliced ​​apples, form a circle starting from the outside edge and gradually complete the rose decoration
  13. Sprinkle the surface with granulated sugar and cinnamon
  14. Bake for 45-50 min until the surface is golden  Once taken out of the oven, let it cool down and then sprinkle with powdered sugar
Create a glaze that makes it shiny
  1. mix 125 gr of water, 50 gr of sugar and 8 gr of cornstarch in a small pot
  2. heat until boiling
  3. brush the gelatin that you have made on the surface

Notes

  • Pinch with a toothpick, if the last part of toothpick  is dry, the cake is cooked!
